Riverway's BGE 8/10/24 Tuscan Chicken

Ingredients

  • 1 Tbsp olive oil

  • 1.5 lb chicken thighs

  • 3 cloves garlic, crushed

  • ¼ cup sun dried tomatoes, finely sliced

  • 1 Tbsp Italian herbs

  • 1/2 cup chicken stock

  • 1 1/2 cup baby spinach

  • ½ cup cream

  • ½ cup parmesan cheese, grated (70g)

  • 1 tbls Wassi's Napa Prime Rub

  • 1 tsp Wassi's Garlicky Rub

  • 16 0z Bowtie Noodles seasoned with Wassi's Premium Steak Rub

Instructions:

Set up Big Green Egg for direct cooking at 400 degrees. Season Chicken & grill until 155 degrees internal temp. Remove Chicken, season with Italian Herbs and place in Cast Iron Skillet withnolive oil on the BGE. Let sizzle for a few minutes. Add garlic and cook until fragrant.Stir in Sun Dried tomatoes. Deglaze skillet with Chicken Stock. Add Parmesan Cheese, Spinach, Cream and Garlicky. Let simmer INDIRECT for approx 10 minutes. Serve with Bowtie Pasta.
